Bermula dengan merebus daging, menyiang dan mengetuk-ngetuk daging tersebut, seterusnya menggoreng sedikit dan barulah di 'rendang' selama lebih kurang 1 jam...hasilnya memanglah sedap, namun aturannya kadang-kadang membuatkan kita agak 'malas' membuatnya.<br />

Recipe : Spicy Breaded Shrimp
20 pcs large shrimp
1 teaspoon lemon juice
1 teaspoon salt
1 teaspoon paprika
1 teaspoon ground pepper
- Marinade prawn and set aside
3 tablespoon flour
1 teaspoon chicken stock powder
1 teaspoon rempah kari ikan
Dash of salt and pepper
1 egg whisk a little
Breadcrumbs
Method
Put shrimp one at a time into flour mixture.
Dip in egg leave the tail clean
coat with bread crumbs
Deep fry for 5 mins or until breadcrumbs turn golden brown
Enjoy your home made breaded shrimp!

<b>Quiche Lorraine</b>
Dough
1 3/4 cups all-purpose flour
1/4 teaspoon coarse salt
1 ¼ cup cold unsalted butter
2 eggs beaten lightly
3 tablespoons ice water
Directions
Process flour, salt in a food processor until combined. Add butter, and process just until mixture resembles coarse meal. Whisk together egg mixture and the water in a small bowl. With processor running, pour in egg mixture; process until dough starts to come together. Shape dough into a disk. Wrap in plastic wrap, and refrigerate at least 30 minutes.
Quiche Filling
All-purpose flour, for dusting
200g sausage
2 slice chicken ham
3 large eggs
2 cups heavy cream
3/4 teaspoon coarse salt
1 tsp mix thyme & basil
1/4 teaspoon freshly ground pepper
Directions
On a lightly floured work surface, roll out dough to 1/4 inch thick. Cut out a 13-inch circle from dough. Press dough onto bottom and up sides of an 11-inch tart pan with a removable bottom; trim dough flush with top edge of pan. Prick bottom all over with a fork. Transfer to a rimmed baking sheet. Freeze until firm, about 30 minutes. Preheat oven to 200oC.
Line tart shell with parchment paper, and fill with pie weights or dried beans. Bake until dough starts to feel firm on the edges, about 20 minutes. Remove parchment and weights; continue baking until crust is pale golden brown, about 10 minutes. Let cool completely on a wire rack. Leave oven on.
Cook sausage and chicken ham in a large skillet over medium heat until browned, about 10 minutes. Transfer with a slotted spoon to paper towels to drain.
Whisk eggs, cream, salt, and pepper in a medium bowl. Pour mixture into tart shell, and scatter the bacon strips on top. Bake until puffed and pale golden brown, about 30 minutes. Let cool at least 30 minutes before serving.

<b>Muffin Labu</b>
2 cawan tepong serbaguna
1 sudu teh soda bikarbonat
1 sudu teh baking powder
1 sudu teh garam kasar
¼ sudu teh serbuk kayu manis (boleh kurangkan jadi 1/8 sudu teh shj)
1 cawan gula perang
¾ cawan gula castor
1 cawan mentega (dicairkan)
4 biji telur grade A
250g labu kuning (butternut)(yg telah direbus & dilenyek)
Cara
Panaskan oven 175oC dan sediakan cawan kek
Ayak tepung, baking powder, baking soda, garam dan serbuk kayu manis, ketepikan
Pukul gula, mentega cair dan telur hingga kembang
Masukkan tepung yang telah di ayak hingga rata
Masukkan labu
Isi setiap bekas cupcake ¾ penuh
Bakar selama 25 minit atau hingga masak (kek lembut dan gebu apabila disentuh)
Hiaskan dengan icing buttercream dan biji labu

My durian crepe is made of 5 types of flour (does not use wheat flour), special custrad cream (not plain fresh cream, ok!) and fresh durian flesh (though now is not durian season, I managed to get plenty of it..Alhamdulillah..). This soft-icecream like fillings mix well with the durian and you'll feel like eating the real durian...(all disclaimers saying that the crepe is only made of wheat flour and santan like a 'ketayap' batter, sorry to say that it's beyond what you think it is..wanna know more...come to my class, I'll teach you the recipe and techniques!)<br />
